Banana Bread

I had a REALLY nice Friday night, actually my whole weekend was quite lovely. Busy, but lovely!

Friday night I decided to do some things that really fulfill me. After I did a 15 minute workout

* Note: Jillian Michael’s “30 Day Shred” went RIGHT back into the mailbox. She is irritating, not fun, and her information is (in my opinion) not accurate.  There is no way I would be able to use her DVD for any length of time, as I was going to punch her out after 15 minutes…and not because it was difficult either. Back to the drawing board.

So…after the not so fun workout, I did have a lovely evening.  I made a huge hummus salad, which is my current obsession, watched an episode of True Blood, and then went to baking. First up, Banana Bread. Even though I don’t eat grains, I still like my baked goods. I usually bake a loaf or some muffins and have a single serving as a snack with my second jug of coffee at work ;-)

Banana Bread

Banana Bread

Ingredients:

  • 2 C. Almond Flour
  • 1/2 C. Flax Meal
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 2 T Chia Seeds
  • 1/4 tsp Cardamom
  • 1 tsp. Cinnamon
  • 3 Large Pastured or Backyard Eggs
  • 2 Overripe Bananas (about 1 C.)
  • 1/2 tsp Apple Cider Vinegar

Method:

  1. Preheat oven to 350° F
  2. Whisk together the almond flour, flax meal, baking soda, salt, chia seeds, and spices.
  3. In another bowl, lightly beat eggs. Add the bananas and mash together. Stir in vinegar.
  4. Combine The wet and the dry ingredients.
  5. Line the bottom of a loaf pan with waxed paper and grease the sides of the pan, and the waxed paper with virgin coconut oil.
  6. Pour batter into the prepared pan and bake in the oven for 25-35 minutes, or until the blade of a knife inserted into the middle of the loaf comes out clean.

  1. Okay, ironically, after that whole comment about exercise – the Shred is the 30-minute program I mentioned! :) I hate her, too. And I never watched her stupid show. But I feel amazing after doing her program. I’ve only done it four time but I really feel so much stronger already, and I see a difference in my body. Some of it is too high-impact for my knees and hips, so I modify, but otherwise I do feel like it’s effective and I don’t hate IT, just HER. :)
