A friend offered up this recipe to me over the weekend, and seeing as I eat kale almost every day I knew I had to try it. Kale is high in calcium, has anti-cancer properties, and is also a source of vitamin B6 (amongst many others). It is a nutrition powerhouse, and I have found MANY ways to cook it, but right now…I think i may have stumbled upon a recipe that may be a tad addictive.
Sadly I also just found out that kale (while being incredibly nutritious) is high in goitrogens and also oxalates. So if you have a thyroid problem, or issues with your kidneys or gallbladder you might want to avoid kale entirely. For normal individuals it looks like it is safe to consume it in a varied diet.

Crunchy Roasted Kale with Garlic
Ingredients:
- 1 Bunch Kale
- 1 Bulb Garlic
- 1-2 T Extra Virgin Olive Oil (or Virgin Coconut Oil)
- Salt to taste
Method:
- Preheat the oven to 400° F.
- Clean the kale and chop off the bottoms. Tear the leaves into pieces.
- Massage the kale with the oil, using as little or as much as you like, but I do recommend using some oil.
- Put down 1 layer of kale on a baking sheet. do not overcrowd it, best to do this step in batches for crunchier results.
- Peel all the cloves from the bulb of garlic and toss on top of the kale. Sprinkle with salt.
- Bake in the oven until the kale is crispy.
- Remove the crispy kale and replace with more kale and repeat, removing the garlic only when it has been fully roasted.
* You can also roast the kale all at the same time as I did for the above photo, but we found that the best pieces were the crispy bits and in future we will do less kale at a time. It is good fresh from the oven or at room temp.
Honestly, this might be my new “popcorn” when watching movies. I used purple stripe garlic from my CSA box, which seems to be sweeter than the garlic you usually get. It was like garlic candy, and something tells me I could just eat a bucket of roasted garlic as well. There was this sticky garlic syrup all over each clove and I am drooling right now thinking about it. Yes, I will be making it again tonight.

I do in fact eat it with my hands, but you don’t have to. I just like the sticky garlic on my fingers.
I do this same thing! I love the super crunchy burnt bits- I roast my kale to the point where it disintegrates when it touches your tongue. Its delicious…Im with you- I eat it like popcorn and yes, I use my hands as well (that way I can lick the salt and oil off my fingertips).

This is a great recipe. I burned it last night, but it was still awesome. I’m going to try it again tomorrow night and try to get the timing exactly right.
