Day of Vegan Goodness!

Yesterday I posted all about my brunch at Plum Vegan Bistro and I ended by mentioning the recipe I tried out Sunday night. I felt that it was just way too much for one blog post, so it continues. My Sunday was a day of vegan goodness! I admit the whole day wasn’t vegan as I did have a cup of coffee with honey in it, but aside from that my vegan friends would be happy with me.

A few weeks ago I stumbled upon Ricki’s blog post where she showcased her vegan breakfast sausage with biscuits and gravy and I knew instantly I had to make it. Matt adores the biscuits and gravy at Wayward Vegan Cafe so I knew he wouldn’t complain. My only frustration is that I ate a heavy brunch at Plum and I should have eaten light all day. Yes I know I could have had this for breakfast, but shoot! Breakfast for dinner is the best!

I changed a couple of things about the recipe, but only because they were things I try not to eat. The rest I kept as is as I think generally it is nice to try a recipe out once to check it out, and then you can doctor it up to suit your own tastes.

My changes were to substitute cooked cream of buckwheat for the brown rice, and I substituted arrowroot for the brown rice flour, and I used a little less than called for.

Even with my substitutions these recipes came out amazingly well. The biscuits are definitely fragile, but Matt was able to slice his to spoon gravy over. They tasted absolutely divine. I can see many variations in my future. Here comes the food porn!

They take a bit of time but these recipes are worth it! Next time I think I might go for a gravy that is a little lighter. This one was very good, but I had 2 biscuits, 3 sausage patties, veggies, and a good serving of gravy and that was QUITE a meal. The biscuits and “sausage” were our clear favorites. Definitely putting these aside to use later. Thank you Ricki!

  1. Oh my gosh, I want those biscuits and gravy RIGHT NOW. Looks great! I’d love to eat dinner with you any time because you have no fear of garlic. That’s my kind of cook!
