Fudge

I don’t really need to dress up the title. It’s fudge. Do you need a reason? Oh? You do? Ok then…it’s HEALTHY fudge. There is no refined sugar, no dairy, there isn’t even any cooking involved. It’s takes about 5 minutes (if that) to prepare. It’s raw, it’s vegan, and it is incredibly satisfying if When you have a chocolate craving. I made a batch and shared it with friends. All thought it was good. Some thought it was great!

The junk food appreciating boyfriend felt they were “good” but very “date-y”…and wants more chocolate in them. I can definitely make his dreams come true with that request next time.

My take…yes there is a date flavor, but I think that adds a caramel level to them, and I rather like that. This first attempt at raw fudge was still something I would be happy sharing with others, and not just those who want healthy food. It’s sweet, chocolate-y, and all around yummy.

It can be a bit temperamental at room temperature so try to keep it as cool as possible. Since coconut oil melts at 76° F you need to be careful with it if you are in a warm climate, or a heated room. I didn’t even need to melt my coconut oil as the weather has been so warm up here my entire supply was in liquid form already. I keep my completed fudge in the freezer where it is safe.

Raw, Vegan…Healthy, FUDGE

Ingredients:

  • 1/2 C. Virgin Coconut Oil
  • 1/2 C. Date paste
  • 1/2 C. Raw Cocoa Powder
  • 1/4 C. Raw Walnuts
  • 1/4 tsp Sea Salt
  • 1 tsp. Vanilla

Method:

  1. In a food processor, combine all the ingredients. Process until smooth, scraping down the bowl a few times.
  2. Cover the bottom and sides of a small container with plastic wrap, waxed paper, or parchment paper. I used a container that was about 5″x5″.
  3. Press the mixture into the container and freeze for half an hour or longer.
  4. Once it solidifies it is safe to pop it out of the container and slice it into chunks. Make sure to store somewhere cold.

  1. Wow. I will definitely have to try these soon. Have you found the flavor of raw cocoa powder comparable to the roasted stuff? Our co-op carries it but it’s painfully expensive.

  2. Well, to be fair my cocoa powder isn’t raw…but you can get raw cocoa powder. I have been using Dagoba cocoa powder and I enjoy it. I will be trying some raw cocoa power soon though. I have had raw cocoa powder in smoothies and raw desserts and I cannot tell much difference between the two, but there IS a difference between cocoa powder varieties. Hershey’s is much different from Dagoba for instance.

  3. I don’t even LIKE fudge and these look incredible. I bought a small can of Dagoba a few days ago but haven’t cracked it open yet. May head down to Date Land again in the fall and will bring you back a prezzie!

    The fudge is pretty damn good, I have some in the freezer. If I see you before I eat it you can have some to see if you like it! I was not a big fudge fan either as it was always too rich and sickly sweet. This stuff just kicks the chocolate craving.
