I started off my day with yet another bowl of gorgeously messy kasha, though today it wasn’t quite as messy as yesterday. I am really loving the PB in my bowl of appley goodness!

In fact, I could definitely go for one of these right about now. Have you been to Katie’s blog yet? You should get there and click away! She is graciously donating ALL of her blog’s revenue this month to the Enough Project, which is a charity that is working to end genocide. Now, in my blog I try not to get on my high horse about anything (except for healthy food), but there are many causes I am truly passionate about. I won’t preach here, but please, DO click as much as you can around her blog. Not only is she sweet and fun, but she had yummy recipes, and she is generous to boot! I’ll even ask a little more of you. Go read through the Enough Project’s website, and also take a look at Save Darfur while you’re at it. Get informed, and do something if you can. My lunch looked familiar. I have been devouring Trader Joe’s Eggplant Hummus for months now, and I STILL haven’t tried to make it. Partly because I am afraid I won’t be able to, and partly because I eat so much of the stuff it is easier to just plop it in my basket. Really, it should come in quart sized containers. I could eat it with a spoon, but lucky for you I was a lady and dipped carrots, red bell peppers, and homemade eggplant chips into it instead. I love how it makes my entire office reek of garlic ;-)

My afternoon did not progress like I had thought. I was supposed to leave on time and meet my mother at the vet with my 3 cats and her 1 cat. Unfortunately I got out of work a wee bit late, the heavens opened up all over Seattle, and we missed the vet appointment. The poor cats were freaked out in my moms car as it rained and hailed on top of them. poor kitties!
So instead of that I headed to my co-op and picked up some groceries. It’s kind of lucky actually, as the vet bill was going to break me, and now I have enough money to cover me for a week. We rescheduled for payday so it all worked out quite nicely.
I got home and put a spaghetti squash and 3 bulbs of garlic in the oven to roast. After a quick shower and a dearly needed shave (read, sasquatch)
, I went to work on my dinner bowl of goodness.
Into my food processor went:
- 1 C. Steamed Broccoli
- 1 C. Steamed Spinach
- 3 T. Vegan Parm
- a couple of Sundried Tomatoes
- Sprinkle of Oregano
- 1.5 BULBS of the roasted Garlic ;-)
- 1/2 tsp. Sea Salt
- 2 Frozen and thawed “pesto cubes”
- Sprinkle of Red Chili flakes
I then poured that all over my spaghetti squash, and it would have been FABULOUS, but the spaghetti squash was a wee bit past it’s prime and it was a tad *cough* dry.

It was still pretty good for dry squash!
I also had an oopsie, please learn from my mistake. Do NOT, I repeat DO NOT leave your food processor running with your vegan parm in it while you wander off to find jars to put it in! All you will end up with is vegan parm BUTTER. Which, I suppose could be made into a lovely spread, but it doesn’t sprinkle well at all. Don’t worry, it isn’t going to waste. I just don’t recommend doing that ;-)
I also added something new to the blog. If you notice there is a new page up in the right hand corner. After much debate with myself (and searching to find photos of myself that hadn’t been deleted) I decided to include a “before and after photos” page. It is honestly difficult for me to look at myself at my previous weight. It tends to remind me of the pain that I was trying to mask, but I did it to show others that it takes time but it CAN be accomplished! If I could do it, then anyone can. Truly.
Well, now I am sipping a lovely cup of Cherry Amaretto Rooibos tea (yum) and I think it might be time for me to go snuggle in my flannel sheets and watch Numb3rs. Yes yes, I am a big dork.
Tomorrow I will be working by awesome part time job and (un)baking pies! I promise to show photos, and hopefully have an incredible raw pumpkin pie recipe soon! TTFN!

I’m dying to see how you do yours. Because raw pumpkin can be interesting. I used pumpk puree but I know there are people who care enough to keep it truly raw…whereas I do not! LOL :)
I think your Before & After photos are amazing. You are brave, gorgeous, courageous, and awesome. Not just for posting the pics but for your success…and that there’s no pill or diet or trick to being healthy; just work & effort and staying the course! GReat job!
Oh and p,s, to answer your other questions….I have done 100% of my blog from the tech side myself. Necessity is the mother of invention. How I would love to have a techie friend, but no, it’s been all me!
