Sorry about the lack of blogging and recipes this week, but my week got a bit crazy, and my food a little um…lackluster ;-) But that will change tonight. My dinner night had to do a switcharoo this week, so tonight I will be in the kitchen cooking for the dude.
But before that, I have to take my car to the shop as there are some issues. I am hoping/praying/asking for it to be an easy and inexpensive fix. I had to buy tires on Tuesday, and even though Costco was having a great sale on Michelin tires (as in buy 4 and get $70 off) it was still a bit of a shock to my expenses. No, I don’t get a kickback from Costco for that, but wouldn’t it be nice!
In the food department I have been a bit boring and also have a couple of somewhat failed experiments. I tried fairly unsuccessfully to make pumpkin buckwheat pancakes using just 1 egg (I ran out!), and so there isn’t a recipe there ;-) Plus the canned pumpkin just made it all very mush, and while I ate them I wouldn’t subject others to the odd texture ;-)
I did make a Thai curry last night that was decent. it was quick and easy. I just used half a head of cabbage, some crimini mushrooms, a clove of garlic, about 6 leaves of kale, a Thai chile pepper, some virgin coconut oil, and about 2 T of red curry paste. I sauteed this all and then added about 3/4 C. coconut milk (the last of my carton) and it was SPICY good in my belly! I wish my curry paste had been better quality though. A woman at my favorite Thai place in Seattle recommends Mae Ploy. I had some but it expired in March. I may like to experiment, but I don’t experiment with expiration dates.
I also made 5 servings of my raw pudding. I made a batch of ABU to top it off with. Actually I was lazy so I just used the last bit of almond milk I had, poured it in a jar with a little almond butter and added some maca powder for flavor. DELICIOUS.
I finished off my PBU with some banana too :-) I don’t eat peanut butter often as it isn’t as healthy as the other nuts, but every now and then I just want to have some of that peanutty flavor. I make sure to get organic and unsweetened of course, so I do get it as healthy as I can.

That is also some Good Earth original sweet & spicy tea which is perfectly spiced for the season.
I was so tickled to see that Heather made my beetballs! They looked so good I wish I could fork one through the screen. I need to make those babies again soon as I LOVED them. I cannot believe I haven’t had any vegan parm yet this week. I am remiss in that too!
This weekend I will be baking these for a vegan bake sale benefiting Pig’s Peace Sanctuary. I may try to Marissify them (i.e. make them grain and sugar free) eventually, as they look pretty tasty! I was going to do VeggieGirl’s Squash Bread (which looks divine, but I need to save time and make a double batch. I can fit more cookies on a cookie sheet than I can muffins in muffin tins. I will be baking that bread soon though ;-) Matt will be very very happy to receive it!

Even though I am not vegan I respect (most) of the beliefs involved in veganism, and I do love vegan food.
