Whoever invented the oven, I could kiss you! I have been really into my roasted veggies this week and I just had to share yet another photo straight from the oven!

Roasted Dinner
That is 1 delicata squash, 1 bunch broccolini, and 1 bulb of garlic, roasted to perfection in some extra virgin olive oil. Perfect Fall dinner if you ask me ;-) Of course I then followed it with a grapefruit, and a night cap of a banana with almond butter. I am a sucker for “dessert”.
Katie has a giveaway going on that I am REALLY excited about. I admit I have never tried any of the Artisana nut butters. I have wanted to, but I always feel like it is a splurge I cannot afford. I would LOVE to be able to taste them! If you want to enter just visit her lovely blog to do so! That cashew butter has been calling me for MONTHS.
My coffee this morning was filled with eggnoggy goodness. In a vegan sort of way. No, I didn’t use silk nog or rice nog (though I am definitely going to try Elana’s Veg-Nogg). I bought a bottle of eggnog flavored oil at Market Spice this past weekend and it has been making an appearance in my coffee every morning since. Is it artificial? Yes. Is that good for me? Probably not, but it’s better for me than the sugar in the other varieties. When I make Elana’s version I will probably use yacon and date sugar, or just yacon. Plus I would have to omit the cinnamon and cloves a I am a purist and just like my nutmeg :-)
I love this Season! I am gearing up for a trip down south to see my family in Houston. I haven’t seen some of them in two years, and for the others it has been over a year. I am just giddy about it since last year I couldn’t make it down to celebrate. I plan on keeping with my usual eating style for most of the trip, luckily my father has changed his diet and so has my brother so they will be more than happy to eat a load of veggies with me. I will of course be indulging in some goodies though. I don’t have much time to bake my own while there and so chances are I will be eating some junk on Christmas Eve. I will do my best, mostly because I don’t enjoy the feeling I feel after eating junk, but I will allow some treats as it is a vacation and it is the holidays!
Tonight I am going to be using my new harissa blend from World Spice Merchant and I am really excited. The fragrance is unbelievable. I think it is going to be another veggie stew which is perfect for the cold weather. Oh! and I saw on the weather report that we might be getting snow on the 10th! I adore snow, I just wish I had some proper boots for it! And I am LOVING this coat.
If you are a Dickens fan, you might like a look at the handwritten copy of A Christmas Carol. I think that is pretty neat myself, but I am a literature nerd.

Bronze.
I couldn’t find Yacon at PCC (I was saying to Chris “Like Bacon but with a Y). I was looking in the sweetener dept. Does it come in a bottle like Agave?

Personally I would pick bronze, you could wear it a lot more. The red is very bold and fierce though. :)
I vote for the red coat! And veggies always taste better roasted.
