I eat a lot of things that aren’t so blogworthy. Meaning they really aren’t worthy of a “recipe” and don’t quite make a good photo. Be that as it may, I eat them on a daily basis and I thought that some of you might enjoy a posting on some of these items. I apologize for the photos, most have been taken with my phone…please do not be horrified ;-) My camera is off to the shop, and will either get fixed or I will have to shell out for a new one. For now I just have the phone for photo goodness.
Lately I have been eating a lot of variations on the same dish. Basically about a lb. of veggies (steamed, roasted, or sautéed) and then covered in my vegan Parmesan. Sometimes I do this in the morning and I add 2 or 3 Pastured or Backyard eggs to the mix as well I am addicted to this stuff, I crave it…and by the way, did you know cats love nutritional yeast? I didn’t. My mother poured some in a bowl though and it was licked CLEAN within minutes. They must take after me ;-)
Saturday night I went over to M’s and we were talking about dinner. I said I would make him some vegan mac and cheese, and he said “but what will you eat?” I said that I would eat some sautéed veggies smothered in my vegan parm. He looked a little reluctant to let me eat that, but we headed off to the store. We bought 2 kinds of squash, broccoli, kale, tomatoes…and when we got back to his place went to work. I said it was time to make the mac and cheese, and he said…
“No, I am having veggies.”
Poor thing decided to eat my weirdness.
He ended up liking my vegan parm much better than the store bought. And he even has leftovers in his fridge which makes me happy because he should eat more vegetables.
Sunday my dinner was a bowl of “salad…which only had a few leaves of lettuce (he ran out), but I filled the rest of the space with carrots, red bell pepper, a cucumber, some garlic stuffed olives, and 3/4 of a container of hummus. My salads usually look like this:
Not exactly the prettiest of photos, but you get the idea. I toss a bunch of veggies in a bowl and top with hummus, or baba ghanouj…depending on what I have on hand. Sometimes it isn’t even a salad, but more a tray of crudit*eacute; dippers. Equally as fun and satisfying. I have amazed my friends by eating salads that are so big it takes an hour for me to consume them. Quite cow-like actually.
My smoothies aren’t pretty. They are usually green, or at least green tinged. They don’t taste like magic, but they make me feel powerful. I basically shove as many nutrients as possible into them and just hope I can choke them down. I am hoping someday to have my very own Vita Mix to that the smoothies will be of even consistency. Mine usually have a few chunks.
I have also been eating my raw pudding almost every night. The past few I have had to go without because my avocados aren’t ripe. This is one complaint I have about my lovely city of Seattle. It never mattered to me before, but in Texas you can get ripe avocados at any time, day or night. Every grocery store will have ripe ones. Here, for some reason…not only are they double to triple the price, but they are hard as rocks and I have to plan WAY ahead if I want my precious pud. I have 8 sitting in my fruit basket mocking me. Heather says that TJ’s sells frozen avo-goodness and so perhaps I shall freeze a bunch of ripe ones and pray they work out when I unfreeze them. Time will tell.
I go through food phases. I eat the same thing over and over again until I have had my fill. There was the refried beans and hot sauce phase, the beet salad phase, the refried beans with spinach phase, the spinach balls phase, butternut squash fries, sauteed kale flowers with shallots, various salads, and most recently the raw pudding, hummus, and vegan parm on everything phase. I can feel that I am coming out of the hummus salad phase, and I think the vegan parm on everything savory is taking it’s place. I will need another salad though, so who knows what that will be. Fall is fast approaching so I imagine it make take a lovely autumn turn. Oh and soup should follow :-)
Last night I ended up doing basically the same thing as I had for breakfast, only with different squash. A Friend gave me this gorgeous summer squash as she had too many. I have no idea what type of squash it is but it was delicious. I did a very simple roasting, stuffing it with garlic, tomatoes, and shallots. I surrounded it with zucchini from another friend’s garden and then roasted it for about 40 minutes. The squash was tender and slightly sweet. Definitely a winner. And then I covered it in my vegan parm ;-) I only ate one half and will probably have the other half for lunch today.
I am having to re-work my exercise as well as lately I have felt like a bum.
I went on a walk yesterday and it ended up pouring down rain on me. Seattle has been without rain for 26 days so it was GREATLY needed, but I was the crazy woman picking blackberries in the rain ;-)
The rain doesn’t stop me!

It’s because they have to be freighted from California or South America… too cold to grow avocados here. I can usually find ripe or nearly ripe ones at safeway or qfc, but I have never found a ripe one at TJ’s.
It’s a damn shame that I cannot get avocados on demand! Then again the weather makes up for it so I don’t complain too much ;-) I do try to buy them from Cali when I can, rather than from South America.
It is lame… luckily TJ’s sells them loose now as well as in 4-packs. When I was in Brazil last year I got avocados that were as big as my head! They were tasty, too, but you can’t find them here :(
oh my…now they would make a lot of pudding!
I am going to freeze a couple of my ripe babies tonight and see how they unfreeze ;-)
