And look it, too! Wow, if you recreate those bad boys, hollla! I am personally just not a cooked grains girl. It's kinda like whatev for me. But...I Can totally see how quinoa would make those tacos lovely! I am also intrigued by what looks like cheese. Or maybe it's like a cashew based white sauce of some sort.
