Banana Buckwheat Pancakes

These were pretty fab, and made enough to that I had leftovers for breakfast the next day. plan was for me to sleep in a little late, and then grab my pancakes and get to work. Unfortunately I came down with a bad case of the allergies, or a head cold. not sure which, but whatever it was/is kept me home yesterday. No matter, i had the leftovers in bed while I watched Good Times and drank some tea. I then watched some Bewitched, took a nap and then got deep into Spartacus: Blood and Sand. I am a little addicted. It is definitely not a family friendly series by any stretch of the imagination. It’s FULL of nudity, and blood, and violence, and offensive language, and I LOVE IT. Ok, I am not actually in love with the blood and violence, and at times I do turn my head, but the rest is marvelous. Lucy Lawless is great, and damn that woman looks amazing naked. Well, these pancakes don’t look as good as Lucy Lawless, but they made for a very yummy couple of breakfasts. On the first day I topped them with fresh strawberries and peanut butter, and on the second I heated up the leftovers in the oven with a banana on top and then mashed the hot banana, plus I added some almond butter. Very very satisfying.

Banana Pancakes

Banana Buckwheat pancakes

Ingredients:

  • 1 C. Buckwheat Flour
  • 1 tsp. Baking Powder
  • 1 tsp. Sea salt
  • 2 tsp. Cinnamon
  • 1 Large Pastured or Backyard Egg
  • 1 C. Coconut Milk (or other milk sub.)
  • 2 T. Virgin Coconut Oil, melted
  • 1 Large Banana, sliced

Method:

  1. Sift together the dry ingredients and set aside.
  2. Melt the virgin coconut oil on low heat and set aside, but don’t let harden again.
  3. Whisk together the egg and the milk, and then drizzle in the coconut oil while continuing to whisk.
  4. Mix together the wet and dry ingredients and then add the banana. Let set for about 5-10 minutes before cooking.
  5. Lightly grease the bottom of a frying pan with some virgin coconut oil and heat the pan to medium.
  6. Spoon in 1/4 C. servings of batter, flipping when bubbles begin to form and the pancake is holding together nicely. cook for the same amount of time on the other side.
