I just wanted to show you some of the food that I had for my birthday. Mainly because it was SO GOOD. Also to show that I do make exceptions to my normal nutritional plan, and I just get back on it as soon as the special day is over…or special days as my birthday lasted for 2 nights of not normal food for me.
First came my Birthday cupcake, which turned into a slice of cake because they only had 1 lonely little cuppie left, and this cherry chocolate cake looked too good to pass up. I ate the whole thing, minus 2 bites…but it took me 2 days to do so.
We then had vegetarian Thai and I ordered a green curry. I like my Thai to be spicy, so I got 7 stars and asked them to make it with fresh chilies. It was delicious! Almost too spicy, but that was perfect for me.
The following night I met a very large group of friends for Vietnamese and had my favorite spring rolls. These are the best I have ever had.
For my entree I got the green mango salad with shrimp. I would have gotten tofu, but the night before I had soy and I try not to have it more than once a week. The green mango was quite a treat and I may have to try and replicate this salad at home.
I have had green papaya salad before and the taste is different. Both are very good, but I think I may prefer the green mango. It has a lovely little tart kick and I am a fan of tart.
Oh oh, and here’s my fortune!
Let’s hope so! And nope, I didn’t eat the cookie. Not worth it to me.
After dinner Matt and I RACED to the theatre to see Alice in Wonderland. We barely made it but I am so glad we tried. It was well worth it! I couldn’t take my eyes of Johnny Depp. I LOVED when he would go into the Scottish.
Ok so on Saturday I got back onto my normal food schedule, and just so you all can see it I wanted to show you what I had for dinner Saturday night. During the day I had coffee with friends (and a friend’s adorable daughter), then Smoothie with other friends at Healeo (and a friend’s adorable dog). For dinner Matt and I made um…”Mexican” Food. Which usually means we cook veggies and dump refried beans on the, This was no exception. Matt thinks I am completely weird because this is how I ate mine. He thinks it is even worse because I took a photo of it and choose to show people on the internet.

Yeah…the lighting in the kitchen does not help make it look remotely appetizing. So what IS that exactly? That would be broccolini, zucchini, sunburst squash, onions, garlic, jalapeno pepper, green bell pepper, portobello mushroom, refried beans, 3 fried eggs, nutritional yeast, and my favorite hot sauce D’elida’s
It was very satisfying, and a perfect way to get back on track.
For dessert (I almost always have dessert) I heated up some frozen raspberries and 100% chocolate buttons on the stove then topped it with some homemade coconut butter.
Seattle has been exceptionally gorgeous the past few weeks so I will show you a little bit of the beauty I have been enjoying.

I have also been given permission to borrow her for walks. Yay! I really miss having a dog. I love my cats and all, but I am definitely a dog person.
