A little while back someone mentioned that they would like to see what I eat in a typical day. Since I don’t make habit of photographing EVERY meal I eat, or bite I take, I don’t have an actual day put together. I do have some sample foods that I snapped photos of from the past week and I thought I’d share with you. This is fairly typical, or rather it is somewhat typical when it comes to the kinds of foods and the preparation of said foods. I don’t always come up with something gourmet, often I make odd little concoctions, similar to what my sister Alison used to call mash. She did Atkins a few years ago and would just make “mashes” out of the foods she ate. I remember her scraping the toppings off of a piece of pizza for her “mash” at a family party once. Good times.
So I started this day off with some raw granola (sprouted seeds, nuts, and a few pieces of dried fruit with some cinnamon), along with some banana, raspberries, and So Delicious unsweetened coconut milk. I had been craving cereal, and this has been an excellent replacement. it was actually Lydia’s Organics grainless apple cereal and it was VERY good! Make sure not to get the kind with agave nectar in it if you do purchase.
I ran out and so the next day i sort of made my own with stuff I had in the fridge, it wasn’t as crunchy because my nuts and seeds weren’t soaked, sprouted, and dehydrated (except the buckwheat was actually), but it was still good. Right now I prefer Lydia’s though. It is already made perfect ;-)
And some tea in my new mug of course. Hook ‘Em!

Next up we have lunch. I actually ate this on yesterday. Matt was sweet enough to buy me some goodies at the co-op. PCC has some fantastic black bean hummus that I keep meaning to try to re-create. I ate 3/4 of that bag of carrots, all the peppers, and all the hummus. Sorry it is so fuzzy, apparently I was in quite a hurry to eat.

Sometimes I have a snack and sometimes I don’t. I eat if I am hungry, and I try to eat what my body is asking for. Lately I have been craving fruit and nut butter, so I indulge. This is some freshly made nut butter that I whipped up in Dolce (The Vita-Mix). It is a combo of raw walnuts, raw Brazil nuts, raw sunflower seeds, golden flax seeds, and raw almonds, plus a little sea salt.

Which brings us to dinner. this was Sunday night’s dinner, and yes Matt ate it too (minus the eggs, and hot sauce, and add a tortilla). I didn’t make him eat it. This so happens to be one of his favorite things I make. This is typical Marissa mash, or what I generally call “mush”. Sautéed veggies with refritos, avocado, and for me, 2 pastured eggs and some hot sauce. I know it isn’t pretty, but damn. It sure is fabulous.

If you are curious, we sautéed up an onion, a bunch of broccolini, a few collard green leaves, a green bell pepper, 2 portobello mushrooms, and 2 vine ripened tomatoes. Add in some Mexican seasoning and sea salt and you have a winner!
Ok so to be fair I usually have dessert too. I don’t have a photo of my usual of late, which has been a bowl of frozen raspberries, heated on the stove with cocoa powder and topped with coconut butter. Last night I had a banana with some of the aforementioned nut butter and some raisins.
And speaking of coconut butter, I found this stuff thanks to my friend Faith. It is the same stuff as coconut butter, only it is called “creamed coconut’, and is MUCH less expensive than the Artisana stuff. Sorry Artisana. I cannot afford your products.

Looks like a delicious day of eats to me! Mexican “mush” (which is what I call mine) is very similar…whatever veggies are in the fridge + refritos + a little noochy jalapeno cheese sauce = yum.
Oh, and tell me more about the creamed coconut! Do you just melt it a little bit to get the texture of coconut butter? I am so intrigued!
Oh that Mexican mush looks SO GOOD. I will have to try something like that!

I bought the Let’s Do Organic bag of large, shredded (chunky, really) unsweetened coconut at Whole Foods this weekend and saw the boxes of Creamed Coconut…but didn’t know what to do with it! How do you use it and how much do you put, as in your example of a bowl of raspberries? Sounds divine!
Also, I love this post. I think it’s helpful for healthy meal planning and eating to see what a whole day looks like instead of a “perfect dinner” like most food blogs will post. Thank you!
What I do is take it out of the little baggie it is in inside the box and put it directly into a jar. I then set the jar next to the stove when i cook my raspberries so that it heats up and melts a little. Or I just use a sharp knife and slice off chunks (more like hack off chunks). I use about 2 T per bowl…heh…I am a glutton.
Ok good to know, I will make sure and do one of these every now and then just to show how my tastes are changing :-)
