I have really been loving the quinoa flakes. So much so that Matt bought an extra box to keep at his place. Since I have been off eggs for a few weeks now, and the quinoa has been my morning protein. Oh and I pad it with some nut butter too of course!

I apologize for the lack of blog entries recently. There have been some things going on in my personal life that have been taking up my time, but I am working on producing more blogs of interest!
The past few days I have had quinoa flakes for breakfast. I miss oatmeal, and since the mornings have [...]

Kabocha Buckwheat Pancakes

A second try at pumpkin pancakes gave us fabulous results! While Matt admittedly prefers “real” pancakes, I am just overjoyed to be able to eat something that is SO close to what I grew up with. That is probably because my mother always used whole wheat, and I didn’t grow up with Bisquick (Thanks Mama!).
I [...]

Because you know I had to make them. You clearly can see I have an obsession with pumpkins. in fact, I ponder a tattoo of a pumpkin (and a pomegranate). If I do it, it will be of my favorite variety, the fairytale pumpkin.
I haven’t been able to find any of these lovelies in my [...]

I came up with the idea to make these yummy apple muffins because my father is a muffin guy. My dad has been visiting these past few days, and one of the things we have discussed has been nutrition. Recently he went to see a nutritionist, and while I believe that she means well when [...]

The first stirrings of Autumn are here. We got a lot of rain this weekend. Much needed rain. To most of the country Seattle seems like a damp and dreary place. What most people don’t know is that our annual rainfall isn’t all that much. We have gone through a drought this Summer and last [...]

I have had so much squash this summer you wouldn’t believe it. No complaints! I love the Zucchs and the squashes, but I have been running out of ideas for (quick) ways to prepare them. Most of my squash have had the same fate…either a slow roast and topped with vegan Parmesan, or a breakfast [...]

Even Better Pancakes

Don’t get me wrong, I love my almond meal pancakes. They are delicious, full of good fats and protein, and they really hit the spot. They are a little dense though, and sometimes I just want something a little more delicate. Enter Coconut flour. Coconut flour isn’t as oil heavy or dense as almond flour, [...]

I was gifted a few pounds of peaches from a friend’s tree, and with the success of my blackberry cobbler I had to try my hand at a peach cobbler. Sadly Matt isn’t a fan of peaches…oh well, I guess this one is all mine ;-)

Ingredients:

5 C. Peaches, chopped
2 T. Arrowroot Powder
1/2 C. Water

It’s hot. It’s REALLY hot. I am from Texas and have been through some scorchers, but at least in Texas we have the decency to have air conditioners. Yesterday in Seattle it got up to 103° F in some spots. I am not amused. I have been trying to think of things to eat that [...]
